Vegan Waldorf Motel 6 Salad

I’ve never had a Waldorf Salad in my life. It’s one of those fancy cucumber sandwich without the crust, WASP things that never made it to Brooklyn. Apparently, it’s apples, celery, walnuts, and mayo. Really? A whole Wiki page for that?

We can do better.


½ C dry wheatberries

1 C water

½ C walnuts, toasted

5 mini cucumbers, sliced

2 C pitted black olives

2 red peppers, medium dice

2 apples, medium-large dice

2 C white beans

2C grapes

1 C tahini paste

1 ¼ C water  

Juice of 1 lemon

1 clove garlic

salt and pepper 


  1. In a small saucepan combine wheatberries and 1 C water over high heat. Bring to a boil, reduce the heat and simmer for 15 minutes. When done spread on a baking sheet to cool.

  2. In a big friggin bowl, combine walnuts, cukes, olives, peppers, beans, apples, grapes

  3. In the bowl of a food processor, combine the tahini, lemon, garlic, 1 ¼ C water, garlic and a punch of salt and pepper. Process until it becomes a creamy dressing. If too thick, add more water by the tablespoon.

  4. Dress and toss the salad.

  5. Refrigerate for 30 minutes

  6. Pour the leftover dressing into a sealed container and use within a week.
