Vegan Devils on Horseback


The ultimate Super Bowl party snack for herbivores, and after a couple of drinks your meatmouth friends will swear that they’re eating bacon wrapped dates.

I made these for a wedding once, and the crush of well dressed people nearly trampling each other to grab a handful of Devils on Horseback looked like something out of World War Z.

They’re that awesome.

I’m channeling my inner Vegan Black Metal Chef with today’s entry I tried to make Seitan on Horseback work, but it didn’t come close to this awesomeness.

Ingredients:

9 Medjool dates (don’t skimp of cheap dates, get the good ones)

1 package Lightlife Tempeh Bacon (I like this one best, but any Fakin Bacon is fine)

9 Pecan halves

9 toothpicks, soaked in water for 30 minutes to prevent burning

Olive Oil Misto or Cooking Spray

Instructions:

  1. Preheat oven to 400F

  2. Slice each date lengthwise. Remove the pit and replace it with a pecan.

  3. Close the date and wrap it with the tempeh strip. Use a toothpick to hold it together.

  4. Place the wrapped dates on a baking tray lined with parchment paper. Mist with olive oil or cooking spray

  5. Bake until tempeh is crispy (approx. 12-15 mins.)

  6. Remove from oven. You might have to pretend to care about the game, but you’ll actually enjoy these devils.

  7. Repeat if you have more guests
