Two Minute Pickle



It’s a salad. It’s a snack. It’s the quickest pickle you’ll ever make. 

Ingredents:

5 Persian cucumbers (those are the little ones, not those big Zucchini looking things)

Juice of 1 lime

Zest of one lime

Pinch of Maldon salt (spend the extra money on Maldon or just use Kosher salt)

5 or 6 twists of freshly ground pepper

Sprinkle of Za’atr (optional)

Sprinkle of Sumac (optional)

Directions:

1- Cut the cucumbers lengthwise into quarters and arrange on a plate. 2- Dump all that other shit on top of the cucumbers in the order listed above. 3- Now you have a pickle. It’s a miracle. It should take you longer to read this recipe than to make it. Go!

[I know that the photo looks busted like Martha Stewart (a notoriously bad food photographer) took it, but I swear to Baby Jesus that this is really good.]
