Toasted Pita and Sesame Seed Salad
This is one of my favorite light, but substantial spring salads. It contains two of my favorite things: toasted things and dried fruit.
I might start going to the Dried Fruit Association’s yearly convention like a cosplayer. I’ll dress up like a California Raisin and get my picture taken with the titans of the dried fruit industry. The rest of the world may still call them prunes, but I was really into that “Plum Amazin’” rebranding. I might have been the only one.
Ingredients:
1 Pita toasted until crispy like a chip
2 hearts of romaine, chopped
1 large cucumber, sliced
4 radishes, sliced
½ C pitted green olives
2 scallions, diced
½ C toasted sunflower seeds (10 mins at 350F)
¼ C golden raisins
4 dried figs, diced
Juice of 1 lemon
Splash of good olive oil
Salt and pepper
Instructions:
Combine all ingredients in a large bowl and toss. Taste and adjust seasoning if needed.
