The Salad With The Things
Every time I go to visit my parents, I ask my mother, “do you want me to bring anything?” And every time the answer is the same thing: a rum cake (it’s an old timey Italian cake that you can only get special order at bakeries that were around before women had the right to vote) and “the salad with all the things, you know, like the one you made last time…with the fruit and nuts”
This is a selfish post. I’m trying to codify a recipe that I’ve made 100 different ways to save myself the supermarket amnesia when I’m trying to remember WTF goes in that salad.
Make one for your mom too, and then tell her I said hi.
3 packed cups mixed greens (arugula, spinach, chard, kale, escarole, whatever you have)
1 C seedless red grapes
1 C cherry tomatoes, halved
1 bell pepper, medium dice
½ C walnuts, chopped and toasted
1 apple, cored and medium diced (if strawberries are in season, sub them in)
½ C sliced green olives
½ C Gorgonzola cheese (you’ll want a strong cheese, Blue or Bulgarian Feta work too)
¼ C red wine vinegar (you can use balsamic, white wine, champagne, who cares what vinegar you use)
½ C olive oil
1 T honey
T Dijon mustard
Throw all the (non dressing) ingredients into a big bowl
In a mason jar, whisk (fork) the oil, vinegar, mustard and honey together to make the dressing. Seal the jar.
Bring the salad and the dressing to your mom’s house.
Shake the dressing to mix. Pour ½ of it on the salad and use tongs to toss.
