Spicy Carrot Side Dish.
A lot of food blogs do something special for Valentine’s Day. Not this one. At TYOS we honor the sidepieces, those who didn’t get the dinner on Friday, those who had to settle for doing V-Day on a randomly chosen night that was convenient for the other person, the half price chocolate getters, the 99 cent store balloon recipients.
Like carrots, sidepieces might not be as sexy as the main dish, but if you dress it up right and make it spicy, it’ll steal the spotlight.
10 small (but not baby) carrots, peeled
2 T olive oil
1 t Garlic powder (This is straight trailer park, but I don’t want bitter, burned garlic)
1 T cumin
1 t Paprika
¼ Cayenne pepper
1 t ground cinnamon
Preheat oven to 400F
In a medium bowl, whisk together all the ingredients besides the carrots until they form a paste.
Coat and rub the carrots with the spice paste.
Place carrots on a parchment lined baking sheet. Drizzle any remaining spices on top.
Bake for 15 minutes, rotate carrots, bake for another 15. They should be soft, but not mushy.
Garnish with something green. Make an effort to pretty it up.
That’s it. You have a new sidepiece.
