Roasted Vegetable Masala
I really wanted to know what happens when you over-roast green beans. I was experimenting like 2 college girls after 3 drinks and no one else around. Just in case that didn’t work out, I roasted some Brussels Sprouts and yams. If the green beans sucked, I could just pick them out. They didn’t suck. Ingredients: 12 oz. green beans, trimmed 2 yams chopped 1 lb. Brussels Sprouts, halved and outer layers removed 1 T curry powder 1 t sweet paprika 1 t hot paprika 1 t cumin 1 t kosher salt ¼ C olive oil Instructions: 1- Preheat oven to 400F 2- In large bowl, combine the spices and olive oil. Whisk together until it forms a paste. 4- Add the vegetables to the bowl and toss with the masala paste until evenly covered. 5- Roast for 30-40 minutes.You want the veg to be crispy and slightly charred.
