Roasted Mini Peppers




1 lb sweet mini peppers

Big glug of olive oil

Kosher salt, a punch of black pepper and a pinch of crushed red pepper

Directions:


1- Place the peppers in a large bowl. 2- Pour olive oil over them and mix until peppers are coated. 3- Add salt and pepper. 4- Roast in a 400F oven for 30-45 minutes. You want them kind of shrivelly and lightly blackened. 5- Eat them with your hands like an animal. Hold the stem, chomp on the pepper, then toss the stem. Awesome.
