Regular Salad for Regular People
Youze guys are the best. I can’t thank you enough for supporting and sharing this blog. Gold stars for you.
But, it’s come to my attention (via e-mail) that I use a lot of ‘weird’, ‘hard-to-find’, or ‘I-don’t-know-what-that-is’ ingredients. This could be remedied a number of ways: you could move somewhere better, you could use the Google or The Amazon, or I could use normal ingredients. Here goes.
4 oz. baby arugula
1 pint strawberries, sliced
½ lb. mixed color peppers, sliced thin
1 head radicchio, cored and sliced thin
1 C toasted walnuts (10 mins at 350F)
½ C green olives, don’t even slice them
1 cucumber, sliced in thin rounds
Juice of 1 lemon
½ C olive oil
¼ C Balsamic vinegar
1 t Dijon mustard
1 t maple syrup (or honey)
salt and pepper
In a large regular bowl combine the arugula, strawberries, peppers, olives, radicchio, cucumber and walnuts.
In a smaller regular bowl, whisk together the lemon juice, balsamic, olive oil, mustard and maple syrup with a pinch of salt and pepper.
Dress the salad with a few tablespoons of the dressing and toss well. Pour the rest into a regular (not hipster type) Mason jar and save for later.
