Pumpkin Spice Oat Muffin


This is not the most delicious vegan muffin you’ll ever eat. There’s a whole internet full of vegan dessert recipes that’ll make your ass fatter. That’s not what I do. This is a 77 Calorie vegan pumpkin oat muffin. 77 motherfuckin’ (I had to drop an MF, Thug Kitchen is “mad hot” right now) calories, and it’s pretty fucking good.

Ingredients:

1 c Organic Pumpkin Puree (Not pumpkin pie filling)

1 c apple sauce

1 c rolled oats

1/3 c molasses

2 t ground cinnamon

½ t ground clove

½ t ground nutmeg

1 T vanilla bean paste (or vanilla extract)

½ baking soda

1 c almond milk

12 pecan halves

cooking spray

Instructions:

  1. Preheat oven to 400F

  2. Combine all ingredients in a blender. Blend until it becomes a batter

  3. Spray a 12-hole muffin tin with cooking spray.

  4. Fill the 12 holes with the batter

  5. Place a pecan half on top of each

  6. Bake for 20 minutes (20 mins is approx. I don’t know what kind of fugazi oven you might have, so check it with a toothpick after 20 mins. If the toothpick comes out dirty, give it another 5 mins.)

Pumpkin- 80

Apple sauce 100

Banana 105

Oats- 380

Molasses- 210

Almond milk-60

 Divide that by 12 and you have 77
