One Pot Meal: Sesame Lentil Rice

This dinner ain’t going to win any beauty contests, but I was jetlagged AF, needed to catch a nap, didn’t want to dirty a million pots and pans making dinner, but, I still wanted it to be awesome. Here’s how I did it.


1 package frozen spinach, partially thawed

1 C brown rice

1 C French Lentils (any lentils besides red ones work)

½ C black sesame seeds

5 ½ C water

A whole lot of salt

2 T cumin

1 t cayenne pepper

Splash of olive oil


1- Make it super easy on yourself. Throw everything except the olive oil into a pot and bring to a boil. 

2- Cover the pot. Reduce the heat as low as it goes while still being on. Set your kitchen timer for 50 minutes. 

3- Go to your couch and take a nap. In 50 minutes, the timer is going to wake you up.

4- Turn the heat off, keep the pot covered. Set the timer for 10 minutes.

5- Think of that as you snooze button. Grab another couple of minutes of naptime until the timer wakes you.

6- Now you’re totally refreshed and dinner is ready. Splash some olive oil in the pot, give it a stir and spoon some into a bowl.
