Maple Cinnamon Chia Pudding
Unlike other supposed superfoods like goji berries, acai, pomegranate juice, green tea, coconut oil/water, Chia Seeds have the benefit of being healthy and can be given as a gag Christmas gift to that racist relative you can’t stand.
They’re also the best thing since hummus and krill oil according to that cardiac surgeon turned snake oil selling clown, Dr. Mehmet Oz.
All joking aside, Chia Seeds are something vegetarians and vegans should be ingesting. The little guys are packed with fiber, omega 3s, protein, tryptophan and they make you feel really full, really fast—which is kind of awesome for those of us who need to lose a chin or two.
Throw some in a smoothie, on a salad, or make a tapioca-like Chia Pudding.
½ C Chia Seeds
2 C Almond or coconut milk
3 T Maple syrup
1 t ground cinnamon (use the real stuff)
1 t Vanilla extract (use the real stuff)
½ C strawberry puree (just puree ½ cup of strawberries)
Get one of those Chinese takeout soup containers, or just a regular quart sized jar and fill it with everything except the strawberry puree.
Stir it up. Cover it. Shake it really hard, then refrigerate for at least 6 hours (overnight is better).
Put some in a bowl, throw some pureed strawberry on top and now you have your health food pudding.
