Lady Luck New Years Lentil Soup
All you gotta do is eat some lentil soup on New Years Eve and you’ll have good luck all year. Italians believe this to be true, and apart from siding with Hitler in WW2, when have they ever been wrong? My grandmother swears this is legit.
Buona Fortuna Lentil Soup
Serves like 20+ (If your resolution is to save more $$, portion it out and freeze it. Now you have 20 super-cheap meals. )
2 gigantic onions, small dice. (Color doesn’t matter, size does.)[ED NOTE: That’s what she said.]
1lb carrots, small dice
1 bunch basil, pulsed in food processor or chopped
1 bunch celery hearts, chopped
10 cloves garlic, minced (You like garlic? Use more.)
12 oz dried lentils
1 package Lightline or Field Roast Italian “Sausage”, crumbled. (Meat-eaters can use real sausage.)
16 oz can diced tomatoes
1 T cumin (feel free to be a little heavy handed)
Kosher salt and pepper
½ t crushed red pepper
1 t coriander
1 t smoked paprika
8 cups vegetable stock
10 oz package frozen spinach
1- Coat the bottom of the biggest stock/soup pot you have with olive oil and turn the heat to medium.
2- Throw in the onion, carrot, basil, celery and garlic. Stir to coat with oil. Hit it with a handful of Kosher salt (I’m serious about the handful as a measurement.) Sautee and stir for 10 minutes.
3- Add the lentils, sausage, tomatoes and spices. Sautee and stir for 3 minutes.
4- Add the stock and bring to a boil, then add the spinach. Keep it at the boil for 3 minutes, then reduce to a simmer.
5- Cover and simmer for 1 hour. Taste after the hour is up. If a flavor needs bumping up, add some more, if it needs to be thinned out, add some water. If it’s good, leave it alone.
6- Use a hand blender to puree the soup, a little or a lot or not at all.
7- Let sit for 15-20 minutes. Ladle into bowls and top with a shake of Nutritional Yeast (parmesan for vegans).
8- Happy New Year. This soup will make you rich, beautiful, clever and well liked. Don’t say I never did nothing for you.
