Grilled Peaches with Yogurt, Mint, Pistachio, and Honey

This is one of those thing I make that can work as either a breakfast or a dessert. It’s super easy to make, and takes like 10 minutes, but it tastes kind of fancy, like some shit you’d get on vacation.


Cooking spray or canola oil

4 peaches, halved and pitted (dig a little out of the hole too)

1 bunch mint leaves, minced

1 C plain yogurt (can be Greek or regular)

¼ C shelled pistachios 

Honey/Date syrup.


  1. Spray a grill pan with some cooking spray, and heat it over high medium and get it hot.

  2. Give your peach halves a little spray too. Place them face down on the pan, and grill for 5 minutes. Use tongs to flip them, and grill for 2 minutes on the other side. 

  3. Meanwhile, stir the mint and yogurt together until fully combined. When the peaches are done, hit them with a big dollop of yogurt sauce, then sprinkle some pistachios on there, and drizzle some honey.
