Green Goddess Dressing with Green Bean and Apple Salad

Green Goddess sound like an environmentally friendly dominatrix, or a song about a really hot stoner chick from The Sword, but it’s really a super unhealthy Avocado, oil and mayo  based salad dressing. Sounds innocuous (‘green’ is good, right?), but it’s the Fettuccine Alfredo of dressings. We’ll cut the fat and calories and keep the awesome. 



1 C Basil

1 Avocado

Juice of 1 lemon

1 shallot

2 T olive oil

1 T maple syrup

¼ C water

Salt and pepper


1 lb green beans, trimmed

3 oz spinach

2 apples, cored and sliced


  1. Combine all dressing ingredients in a food processor and give it minute to process. Taste and adjust the seasoning. You’re done.

  2. Blanch green beans in salty boiled water for 2 minutes. Run cold water over them until they’re cool. Combine with spinach and apple in a large bowl. Toss with the dressing one tablespoon at a time until dressed.

  3. Save the extra dressing in a sealed jar and refrigerate.
