Green Bean Salad w/ Blood Orange Juice

This picture is doing the salad no justice. The blood orange juice made everything look a little pink for the camera, but it didn’t look like that in real life. Make a bunch of this for a BBQ…just don’t dress it until you’re ready to serve. 


1 lb. green beans

2 C salad greens (arugula, spinach, romaine)

6 mini seedless cucumbers, or 1 large seedless, sliced into half moons

1 pear, medium dice

2 C Cannellini beans

¼ C hemp seeds

Juice of 2 blood oranges

¼ t crushed red pepper

glug of olive oil



1- Bring a pot of water to the boil. Cook the green beans for 4 minutes. Drain and run cold water over them until they’ve thoroughly cooled. Set aside

2- In a large bowl, combine the green beans, salad greens, cukes, pear, beans, pepper and hemp seeds. 

3- Pour the juice and olive oil over the salad. Mix thoroughly. Taste and adjust salt.
