Fruity Spring Salad

Let’s make Spring a state of mind and enjoy this refreshing, hydrating salad in the sub-freezing, depressing cold
3 oz Spring Mix Greens
3 Persian cucumbers, chopped
2 C strawberries, sliced
2 pears, medium dice
2 cooked veggie burger patties, crumbled
1 bunch mint, chopped
12 oz Grape tomatoes, halved
2 T olive oil
1 T white wine vinegar
1 t agave (Honey or Maple syrup work fine)
Salt and pepper
Whisk together the oil, honey and agave until it forms a dressing. Set aside.
Combine the ingredients in a large salad bowl. Dress and toss. Taste and adjust salt and pepper.
While you eat the salad just pretend that it’s that first warm and sunny day of the year when women bust out the skimpiest outfit they’ve been working out all winter to fit into and rock it like they don’t care.
