Fluffy Truffle-y Eggs
Facebook isn’t just for humblebragging, attention whoring and pretending to care about suffering in the world. One time I saw a video of someone making fluffy eggs and it looked really awesome, but it was in Russian and I didn’t understand WTF she was saying. I didn’t have to go too deep into my Sherlock Holmesian mind palace to figure this one out.
It’s super easy, super awesome, and looks and tastes like fun.
1 piece Lavash bread (any flat bread will do)
Pinch of truffle salt
Pinch of black pepper
Separate the egg whites from the yolks. Put the whites in a medium mixing bowl, and reserve the yolks intact. Make sure there is no yolk mixed in with your whites, segregate the eggs like the 1950s south, or else the step 3 will not work.
Season the whites generously with truffle salt
Using an hand mixer, beat the egg whites until hard peaks develop (if you can turn the bowl upside down and nothing falls out, you’re good)
Preheat oven to 350F
Line a baking sheet with parchment and place the bread on top. Scoop the fluffy egg white mixture out and center it on top of the bread. Try to form a bowl out of the egg whites. Make an indentation or a well in the center.
Fill the well with 3 of the egg yolks and season with truffle salt and pepper. Try not to break the yolks, but if you do, it’s not the end of the world.
Put the tray in the oven and bake for around 15 minutes. Now, I don’t know how you like your eggs or how your oven works. 15 minutes is a guideline. It might take 10 or 20 minutes for you to get your eggs they way you want them.
Microplane some cheese over it, then get a knife and fork and crack this thing open.
