Fill 'er Up Salad


Serves 2 stahhvin’ people.

 I usually call this the “Clean Out the Fridge Dinner Salad”, but I’m going with an inside joke that only 3 people will get—because that’s what I do. My awesome friend Megan asked me about making a salad that’s filling, but not full of high calorie items. This is what I had for dinner last night.

Ingredients:

1 C shelled edamame

½ lb green beans, trimmed

4 oz Greens (Kale, Arugula, Spinach or a mix)

1 C shredded carrots

2 apples, cored, medium dice

4 ribs celery, chopped

Instructions:

  1. Bring 8 cups of salted water (salty like ocean water in your mouth at the beach) to the boil.

  2. Fill a large bowl with ice cold water.

  3. Boil the edamame for 4 minutes, then transfer to the cold water bowl.

  4. Boil the green beans for 2 minutes, then transfer to the cold water bowl.

  5. In the largest bowl you have, combine all the ingredients and dress with Lemon Miso Tahini or Dojo Dressing
