Cocoa Coconut Oatmeal Muffins

I get more emails about Baked Oatmeal “Muffins” than any other post. Apparently, people are really into the idea of a 100-calorie natural breakfast muffins. I get it, but what about something a little sweeter? What about a guilt-free dessert or snack to munch on while watching True Detective?

Let’s make this happen with two things everyone loves: coconut and chocolate.


1 Banana, mashed

2 C Rolled Oats or Old-Fashioned Oatmeal (the 5 minute kind)

1 C sweetened shredded coconut. Plus extra for topping

2 C Coconut Almond Milk (Any nut milk works here)

½ C cocoa powder (It’s not really dessert if it’s not chocolate-y)

1/3 C Agave

1 T coconut oil

1 ½ t vanilla paste (extract works too)

Cooking spray


  1. Preheat oven to 400F

  2. Mix everything together in a large bowl. Stir it like you mean it.

  3. Spray a muffin tin with the cooking spray. Fill the cups with the mixture. Top with shredded coconut.

  4. Bake for 30 minutes, until they can pass the toothpick test.

  5. Be a decent person. No True Detective spoilers.
