Chocolate Peanut Butter Mousse Only a Gluten Free Raw Vegan Could Love
Everybody loves a rich decadent chocolate mousse…except people trying to avoid a the massive eggs, cream, sugar and butter calorie bomb that makes a mousse mousee-y.
To be very clear: this is not a traditional chocolate mousse—this isn’t something you’d be served at a decent French restaurant. This is a healthy, vegan alternative. This is not for everybody, this is not Vegan 101.
If you’re trying to convert someone to a your way of eating, don’t start here. But if you’re craving something sweet like chocolate and peanut butter after dinner and you’re already used to vegan food: Make This!
2 bananas, very ripe and spotty
½ avocado, ripe as a gym locker room
4 pitted dates
¼ C coconut milk
¼ C smooth peanut butter
¼ C date syrup or agave
¼ C Dutch cocoa powder (If it ain’t Dutch it ain’t much, but you can regular cocoa)
2 t vanilla extract or vanilla bean paste
1 piece raw chocolate for garnish
Combine all ingredients in a food processor or strong blender and puree until very smooth.
Pour into a 4-6 small bowls or Ramekins and refrigerate for 1 hour.
Shave some raw chocolate over the top of it.
