Cauliflower ‘Rice’ with Macadamia, Chickpeas, and Olives

If you’re trying to cut back on all the carbage in your diet, and want to have a healthy dinner that doesn’t taste like health food

: make this. Eat it hot, eat it room temp, eat it cold as a salad. 


Ingredients:

1 T olive oil

½ C Macadamia nuts

1 head cauliflower, pulsed in a food processor, or grated, until it looks like rice

1 can chickpeas, drained and rinsed

½ C pitted green olives

½ t sriracha

Salt and pepper


Instructions:

  1. Heat the olive oil in a large saute pan over medium heat. Add the nuts and cook for 2 minutes.

  2. Add the cauliflower, chickpeas, olives, sriracha, and a punch of salt and pepper. Stir to combine

  3. Lower the heat to low-med, cover the pot and cook for 7 minutes.

  4. Taste. Adjust the seasoning if needed.
