Cauliflower Power: More Than Just Pale Broccoli
Cauliflower is more than than just that gross white broccoli you hated as a kid. Like Brussels Spouts, your mother just boiled it, acted like there was nothing wrong with that and put in on a plate. Maybe you got some salt, pepper and butter if you were really lucky. And like Screamin’ Rebel Angel Sprouts, we’re going to undo the damage and childhood trauma.
Cauliflower has an undeserved bad reputation. It’s been crucifered (pat myself on the back) for the sins of bad cooks everywhere.
The cauliflower comeback will happen on this blog. We’re going to start with the most basic recipe and get fancy from there. The spices in this one seep in and it’s lemony, cuminy delicious, and it has turmeric in it, which Dr. Oz says will make you immortal. I swear I think I heard him say that.
Whole Roasted Cauliflower
1 head cauliflower, green stuff trimmed
2 cloves garlic, minced
Juice of 1 lemon
1 t Cumin
1 t Sumac
1 t Turmeric
½ t salt
2 T olive oil
Preheat oven to 400F
Whisk all ingredients except cauliflower together in a bowl until combined.
Place cauliflower in a baking dish and coat with the dressing. Cover the whole thing until it looks like a yellow brain.
Roast for about an hour. Start checking at 45 minutes to make sure it’s not burning (you might have a terrible oven).
Cut it and serve it.
