Can’t Beet This Salad

My main man Eli put me on to this Beet and Prune salad he had on a recent trip to Israel. We share a passion for oddball fruit and vegetable combinations and this one is awesome. You’re probably all like, “What? Beets and prunes; that’s gross.” Try it and I’ll pass your thanks on to Eli.


1 large beet, peeled and diced

6 prunes, chopped

3 scallions, minced

1 T orange zest (If you have candied orange rind use that instead)

1 T sugar

1 T olive oil

2 T orange juice

Salt and pepper


Combine all ingredients in a bowl. Stir well. Refrigerate for 30 minutes, then enjoy.
