Bulgar and Peas: Because You Can't Have Rice and Beans Every Day


It’s shrinky dink cold and snowy on April 16, so instead of a salad today I’m going with a warming, stick to your ribs one pot dish. Easy Pea-sy.

Ingredients:

1 leek, cleaned (they’re filthy) and sliced thinly into half moons

2 T coconut oil

2 t salt

1 T turmeric

Juice of 1 lemon

1 T sumac

1 T fenugreek

1 C dry bulgar

2 C frozen peas

¼ C tomato paste

2 C water

Pinch of pepper

Instructions:

  1. Melt the coconut oil in a large saucepan over medium heat.

  2. Add the leek and a pinch of salt. Stir and sauté for 3 minutes.

  3. Add all other ingredients except for the water. Stir to combine and cook for 3 minutes.

  4. Add the water and bring to a boil. Lower the heat to the lowest setting, cover and simmer for 20 mins.

  5. The water should be totally absorbed. Taste and adjust seasoning.
