Brokeass Vegan: Trailer Park Chili

Not every vegan has the luxury or interest in frolicking around the Greenmarket, trying to pay $10/lb for Brussels Sprouts; or wants to drop the equivalent of a month’s rent in a flyover state at Whole Foods for a week’s worth of groceries.
Supermarkets are always having sales on canned goods, and regardless of what the internet says: everything from a can isn’t toxic poison. Sometimes I don’t want to soak my beans overnight and then boil them for 2 hours. Sometimes I just want to open a can, rinse and use.
Ingredients:
8 oz can tomato paste
1 T Adobo
7 oz can chipotle peppers in sauce (rinse if you’re not a hot food hero)
20 oz can Kidney beans (rinsed)
10 oz package frozen spinach
12 oz veggie grounds
16 oz can Hominy (or regular corn)
1 ripe avocado
Pepper Jack Daiya (optional)
Instructions:
Open all cans and packages. Dump their contents in a large pot. Stir it up. Add ½ C of water. Bring to a boil, then lower the heat and simmer for 45 minutes.
Scoop out the avocado by the tbsp. and stir in.
Add a handful of shredded Daiya and melt it into the chili.
Serve it over rice and stretch your dollar even further. 10-12 meals for less than $20.
