Banana Bread with Chocolate Chips and Walnuts
A snowstorm was about to hit as I walked up to my fruit and veg guy Musa’s cart. I bought 2 quarts of blueberries, and he gave me 2 giant bags of bananas for free, and wisely called it a day. What a great dude, but what the fuck am I supposed to do with all of these rapidly ripening bananas. My Instagram friends had a few ideas, and I took their advice. Here’s the first one—perfect for a freezing snow day.
Prior to this, I had only made one banana bread in my life, but it was fucking awesome, so I tried to remember how I did it, but without oil. He’s a lighter, but no less fucking awesome version of that banana bread
3 overripe bananas, mashed
1 t baking soda
1 t baking powder
2 C flour
1 C sugar
1 stick butter
2 T Grady’s coffee concentrate (or cold espresso)
½ C chopped walnuts + extra for topping
¾ C chocolate chips + extra for topping
Preheat oven to 350F, and grease a loaf pan
In a big bowl, stir the mashed bananas, baking soda, baking powder, and flour together until fully combined.
In medium bowl, use a hand mixer (or a whisk) to whip the eggs, sugar, butter, and cold brew together until it’s fully incorporated.
Pour the egg mix over the flour mix. Stir the walnuts and chocolate chips in. Keep mixing until it forms a batter.
Pour the batter into a loaf pan. Top it with some crushed walnut and chocolate pieces (take a handful of each, put them in a ziplock bag, and smash them up with a rolling pin
Bake for 1 hr. Do the toothpick test to see if it’s done. If it is, let cool for at least 15 minutes.
