Asian-ish Bowl of Deliciousness
In case you missed the other post where I was pimping Rice Cakes hard, I’m about to blow your mind. A single one pound package is 120 calories and makes 4 servings. The ingredients are: rice, water.
This whole thing is under 200 calories a serving with the egg and avocado. Compare that with a 1000+ calorie sodium disaster of a rice bowl or ramen. I’m not saying mine tastes better, but you won’t look pregnant after eating it…unless you’re already pregnant.
1 T white miso
Juice of 1 lemon
½ t Sriracha
1 t sesame oil
6 scallions, sliced
6 radishes, thinly sliced
1 C kimchi
1 lb rice cakes
10 oz. spinach
4 hard boiled eggs (boil 3 mins, let sit in hot water for 10 mins), sliced
1 avocado sliced
In a small bowl, whisk together the miso, lemon, Sriracha and sesame oil to make your sauce. Set aside.
Boil the rice cakes and the spinach together for 10 minutes in salted water. Drain in a colander and return to the pot.
On low heat, add the sauce, kimchi, scallion and radish to the rice cake spinach combo. Cook for a few minutes, but allow the veg to maintain their crunchiness. Taste and adjust seasoning.
Plate and top with egg and avocado.
