Apple Masala with Coconut Crack Rice

You know when you’re in that I’m-hungry-for-dinner-but-I-want-something-sweet kind of moods? This is just the thing you want. 

Warning: once you make rice with coconut milk, you may never go back to water again, it’s add-fucking-dictive. 


1 ½ C sticky rice

2 C coconut milk

1 C walnut pieces

2 T coconut oil

2 T garam masala

½ C water

3 apples, medium dice

2 t maple syrup


  1. Combine the rice and coconut milk in a small pot and bring to a boil. Cover, and reduce to the lowest setting on your stove. Cook for 20 minutes

  2. Toast the walnuts for 5 minutes in a large pan over medium heat.

  3. Add the coconut oil and melt. Add the garam masala powder and stir it up with the oil and walnuts. Once it smells like coconut Thanksgiving, add the water and stir until it makes a gravy-like sauce.

  4. Add the apples and maple syrup. Stir to coat with the sauce and cook for 5 minutes.
