7 Minute Zucchini Rice


Carb-o-phobia is still running wild, and grain alternatives are getting a lot of face time on TYOS because I GAF and give the people what they want. A cup of zucchini has 19 calories and 3.5g of carbohydrates. Since man can’t live on zucchini ‘noodles’ alone, let’s do a garlicky rice dish. 


Ingredients:

Olive oil

3 large zucchini, grated and cut to look rice-ish 

2 cloves of garlic, minced

½ C shelled pistachio (any nut works here)

Salt and pepper

¼ C sesame seeds


Instructions:

  1. Coat the bottom of a large pan with olive oil, and heat it over medium-high.

  2. Add the zucchini, garlic, pistachio, s&p. Stir to combine.

  3. Don’t change the heat setting, and cook for 5 minutes.

  4. Drain off any excess liquid.

  5. Garnish with sesame seeds.
