100 Calorie Vegan Protein Oatmeal Muffins

The last baked oatmeal muffin recipe was as popular as Justin Bieber at one of Bryan Singer’s twink parties. If you don’t get that: it just means it was pretty popular. Anyway, I’ve been working on a bigger, better version of the muffins, and I think I nailed it.

 I bolstered this batch with protein powder because Vegans and Vegheads (including me) are always kind of protein paranoid.

So, a delicious protein powered portable breakfast or snack for around 100 calories without all preservatives of a protein bar. Yeah, it’s pretty awesome.


1 C apple sauce

4 packets Splenda, Stevia, or your favorite sweetener

2 ½ C rolled oats

2 C water

2 T flax seeds

2 C raspberries (any kind of berry works here)

1 t vanilla extract

2 T vanilla vegan protein powder (I use Vega)

Cooking spray

Just the Tip- Dust your berries with a little bit of flour before adding, so they don’t just sink to the bottom of the muffin like they’re wearing cement shoes.


  1. Preheat oven to 400F

  2. In a large mixing bowl, combine apple sauce, sweetener, vanilla, protein powder, flax, oats and berries. Stir well and let sit for 5 minutes.

  3. Grease a muffin tin. Using a spoon, fill each of the cups with the mixture.

  4. Place in the oven and bake for 30 minutes (or longer if your oven sucks).
